Italian Beef Short Rib Ragu

Make your guests swoon over tender, melt-in-your-mouth beef and the robust flavors of tomato, red wine, and herbs. This slow-cooked recipe is a dinner party winner. 

You need:

  • Beef short ribs
  • Olive oil
  • Onion
  • Carrot
  • Garlic
  • Shallot
  • Red wine
  • Tomato paste
  • Crushed tomato
  • Beef stock
  • Bay leaves
  • Fresh thyme
  • Fresh rosemary
  • Kosher salt
  • Ground black pepper
  • Pappardelle pasta
  • Parmigiano cheese
  • Parsley

Start by generously seasoning the short rib with kosher salt. Then, place them in a large pot or Dutch oven and sear on each side until deep brown. 

Next, add the onion, shallot, carrot, garlic, salt, and pepper. Sauté over medium heat and then add the tomato paste. Slowly pour in the red wine. 

Add the crushed tomatoes, bay leaves, rosemary, beef stock, and thyme. Stir to combine all the ingredients.

Cover the pot and let it simmer for three to four hours. Meanwhile, cook the pappardelle pasta and toss it with the ragu sauce. Follow this authentic short rib ragu to prepare a hearty meal. 

Saffron Risotto with Scallops

You need:

  • Saffron threads
  • Chicken or vegetable broth
  • Olive oil
  • Onion
  • Garlic cloves
  • Arborio rice
  • Dry white wine
  • Parmesan cheese
  • Scallops
  • Salt and pepper

Start by steeping the saffron threads in warm broth for 10 minutes. Heat olive oil in a saucepan over medium heat, then add onion and garlic. Cook until translucent. Add Arborio rice and stir to coat with oil.

Caprese Stuffed Salmon

You need:

  • Salmon fillets
  • Olive oil
  • Fresh mozzarella cheese
  • Tomatoes
  • Fresh basil leaves
  • Balsamic vinegar
  • Salt and pepper

Preheat your oven to 375°F. 

Pat dry the salmon fillets and season with salt and pepper. Mix diced tomatoes, chopped basil leaves, balsamic vinegar, and salt and pepper in a separate bowl. Cut a pocket into each salmon fillet and stuff with the tomato mixture. 

Heat olive oil in a pan and sear the salmon fillets on each side for 2-3 minutes until golden brown. Transfer the salmon to a baking dish and bake for 8-10 minutes until fully cooked.  

Before serving, top each fillet with slices of fresh mozzarella cheese and bake for 2-3 minutes until the cheese is melted. To ensure a perfect dish, avoid common salmon cooking mistakes.

Lemon Basil Chicken

Spice up your dinner with this zesty, herb-infused chicken dish.

You need:

  • Boneless, skinless chicken breasts
  • Olive oil
  • Garlic cloves
  • Lemon juice and zest
  • Fresh basil leaves
  • Salt and pepper

Start by marinating the chicken breasts in olive oil, minced garlic, lemon juice and zest, chopped basil leaves, salt and pepper. Let it sit for at least 30 minutes. 

Heat olive oil in a pan over medium-high heat. Add the marinated chicken breasts and cook for 5-6 minutes per side until golden brown and fully cooked.

Garlic Butter Shrimp Scampi

Though it sounds fancy, this dish is incredibly easy to make. 

You need:

  • Shrimp
  • Olive oil
  • Butter
  • Garlic cloves
  • Cayenne pepper 
  • Lemon juice and zest
  • Fresh parsley leaves

Start by peeling and deveining the shrimp, leaving the tails on for presentation. In a pan, heat olive oil and butter over medium heat. Add minced garlic and cayenne pepper, cooking until fragrant.

Add the shrimp and cook each side for 2-3 minutes. Squeeze in lemon juice and zest, and sprinkle with chopped fresh parsley leaves. Serve over pasta or with crusty bread for dipping in the delicious garlic butter sauce.

Chocolate Hazelnut Torte

End your dinner party on a rich and creamy note. This decadent chocolate hazelnut torte will disappear in seconds after being served up.

You need:

  • Butter
  • Hazelnuts
  • Bittersweet chocolate
  • Heavy cream
  • Sugar
  • Eggs
  • Vanilla extract
  • Salt

Start by roasting hazelnuts in a dry pan until lightly golden and fragrant. Let them cool, then finely chop and set aside.
