And have you noticed how the more colorful a dish it the more people want to eat it? This recipe is not exception using mini sweet peppers in assorted yellow, orange, and red. It a nice change from ready-made frozen appetizers and isn’t a lot work to make.
First set your oven to broil setting to preheat. Wash and cut peppers lengthwise to remove seeds. Cook up the bacon until it’s crisp enough to crumble.
Next, combine the goat cheese and ricotta with thyme, bacon crumbles, salt, and pepper. Cover a baking sheet with parchment paper. Stuff the peppers using a small spoon. Sprinkle grated Parmesan cheese on top. Lay them on the cover baking sheet. Broil for about 5 minutes until the cheese starts browning and the peppers begin blistering.
