I had my doubts about a cake recipe with no oil or eggs, but I was pleasantly surprised by how good these taste. Taking out the oil and eggs reduces the calories and fat. The pumpkin replaces the moisture needed. Plus, it adds more flavor to the recipe.
There are both cake and cupcake versions in the recipe. I’ve also used mini bundt pans like in the photos of this post.
